Favorite Ingredient Friday - Muffin Edition


Chocolate Chip Banana Muffins

Ingredients:
1. 1 egg
2. 2 cups Original Bisquick® mix
3. 1 1/4 cups mashed very ripe bananas (2 to 3 medium)
4. 1/3 cup sugar
5. 3 tablespoons vegetable oil (I use applesauce in place of oil for baking recipes)
6. 1/3 cup miniature semisweet chocolate chips

Directions:
1. Heat oven to 400ºF. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups.
2. Beat egg slightly in medium bowl; stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
3. Bake about 15 minutes or until golden brown.

High Altitude (3500-6500 ft) Heat oven to 425ºF. Use 14 medium muffin cups. Decrease sugar to 1/4 cup.

I just gain a few pounds coming by your blog.
Here one for you:
Pecan Muffins
1 cup light brown sugar
1/2 c flour
1/2 c chopped pecan
Mix all together
add:
2 eggs
2/3 c butter
fill muffin liners ( foil ones)2/3 full. bake 350 for 20-25 mins.
yield 10 muffins....
taste like pecan pie. Yummy
