Favorite Ingredient Friday
Edited to add: Anonymous just pointed out this has cream of chicken in the recipe - oops! That ingredient slipped by me when I was looking for a vegetarian recipe! I'm sure you can substitute cream of mushroom, celery, or broccoli and it would still taste great though!
This week is a vegetarian edition. I got this recipe from my Aunt Sheri. She made this while we were visiting a couple of years ago and it is really tasty.
Squash Casserole
1. 2 lbs yellow summer squash (sliced)
2. 1 can cream of chicken soup
3. 1 C shredded carrots
4. 1 (8 oz) package herb stuffing
5. 1/2 C melted butter
6. 1 C sour cream
Cook sliced squash in salted, boiling water for 5 min, or until tender. Drain real good.
Combine soup and sour cream in separate bowl and stir well. Add carrots. Fold in squash.
Combine stuffing mix with melted butter.
Take 1/2 stuffing mix and spread on bottom of 9x13 pan. Put vegetable/soup mixture on next and sprinkle remaining stuffing on top.
Bake at 350 for 25 min.

Not too sure cream of chicken is considered vegetarian... ;o) but it still looks great!

Sounds like a great recipe. Funny about the cream of chicken soup. Guess it depends on what kind of vegetarian you are :)

I have a version of this that makes people who hate squash mouth water...I will have to send it to you sometime...Sounds great!!!

I got those baskets at Home Depot. They were 9.99 each. They had a lot of neat organization things in their closet and cabinet department. I'm sure I'll be making a return trip.

Truthfully, I wouldn't have noticed the cream of mushroom in the recipe had it not been pointed out. :) This casserole sounds yummy!
