Slow Cooker Thursday



I haven't made this recipe yet, I just found it online this morning! But it sure sounds good and I'm going to try it this weekend.


Cream Cheese Chicken

Ingredients:
4-6 boneless, skinless chicken breasts
1/4 cup melted butter or margarine
Salt and pepper, to taste
2 packets dry Ranch or Italian Dressing mix
1 can cream of chicken soup
8 ounces cream cheese, cut into cubes
1/2 c chicken broth
1/2 chopped onion

Directions:
Brush chicken with butter and sprinkle with salt and pepper. Place in a slow cooker and sprinkle 1 packet dry mix over all. Cover and cook on low for 6 to 7 hours.

About 45 minutes before done, brown onion in 1/4 cup of juices from slow cooker. Add soup, second packet of dry dressing mix, cream cheese and chicken broth. Cook until smooth. Pour over the chicken and cover and cook another 45 minutes.

Serve with sauce. Goes great with rice, stuffing, pasta or mashed potatoes! Add in broccoli or other veggies for variety.

This sounds good, going to have to try it. I made lazy day stew yesterday in the slow cooker...must be "Slow Cooker Week" Of course my slow cooker is my best friend...give us more time for fishing.

I made it tonight! So good! I used cream of chicken and mushroom soup and left out the onions(okay I was too lazy to deal with it!). I didn't have much liquid left to brown the onions anyways! Very moist! I think you could get away with 1 packet of Ranch, which I will try the next time I make it!
