Favorite Ingredient Friday
Caribbean Pork 'N Rice (courtesy of Kraft Foods)
Ingredients:
1. 1 lb. pork tenderloin, cut into chunks
2. 1 Tbsp. oil
3. 1 medium onion, chopped
4. 2 medium carrots, chopped
5. 1 can (14 oz.) pineapple chunks, drained
6. 1 can (14 oz.) water
7. 1/4 cup BULL'S-EYE Original Barbecue Sauce
8. 1 tsp. ground ginger
9. 1 green pepper, chopped
10. 2 cups uncooked instant white rice
Directions:
COOK tenderloin in oil in a large skillet. Add onion and carrots and cook until pork is no longer pink inside.
STIR in pineapple, water, barbecue sauce, ground ginger, green pepper and rice.
BRING to boil; cover and let stand 5 minutes.
You can substitute boneless skinless chicken breast for the pork tenderloin.

I had seen this recipe in my Kraft Recipes magazine and thought it sounded so good...I love rice and with this pork and veggies mixture, I just know it must taste fabulous!! xox
