Favorite Ingredient Friday



Chicken Fingers on a Stick

Ingredients:

1. 4 boneless, skinless chicken breasts, pounded 1/2-3/4 in thick (or you could use the chicken tenderloins like I did!)
2. 3 Tbsp peanut or vegetable oil
3. 2 Tbsp bbq sauce
4. 1 1/4 C plain, dried bread crumbs
5. Salt and pepper

Directions:
1. Cut each chicken breast lengthwise into 1/2-in wide strips and sprinkle with salt and pepper. Fold the chicken strips slightly and weave them onto the skewers.

2. In a small bowl, stir together oil and bbq sauce. Spread the bread crumbs on a sheet of waxed paper. Lightly brush the sauce mixture over the chicken strips and roll them in the bread crumbs.

3. Grill the chicken fingers uncovered until they're no longer pink inside; about 2-4 min per side on a gas grill.

These were delicious!

And while you're on the grill making these chicken tenders how about a recipe forPerfect Potatoes

Ingredients:
1. 3 large baking potatoes
2. 1/4 C olive oil
3. 1 tsp salt
4. 1 tsp paprika
5. 2 tsp garlic powder (not garlic salt)

Directions:
1. Clean and halve each potato. Cut each half into 1-in slices. In a large bowl combine the remaining ingredients. Add potatoes and toss gently to coat.

2. Arrange potato slices on a 20-in square of double-thick aluminum foil (or use a foil bag). Fold the foil around the potatoes and seal tightly. Grill over medium heat for about 20 min, turning every 10 min. Open packet to test; when fork-tender, remove from grill and serve immediately.

I think potatoes have to be one of my favorite foods and these were very yummy! So flavorful and tender! Definitely 2 thumbs up!

Mmmm, thanks Michelle. I think we'll try those tonight. With moving I don't want to buy groceries and all we have is chicken breast in the freezer.

That's how I do my potatoes except I cut up onions and toss those in the foil pack with some butter.

Those chicken fingers on a stick seem like they'd be a big hit with kids! I'm always on the look out for food they will eat with no trouble! Sounds awesome!

I make chicken fingers but that aren't on a stick...these sound like a great idea and I love the thought of bbq sauce with the crumbs on them. Will have to try them:-) xox

I think I'd use the chicken tenderloins for your chiken fingers on a stick recipe. That sounds easiest.

I make potatoes almost exactly like your Perfect Potatoes recipe, except I've never put paprika in them. I'll have to try that. :)
