Favorite Ingredient Friday - Healthy Eating Edition

Overwhelmed has asked for Healthy Eating recipes today. So I went to my "A Guide to a Healthy Lifestyle" booklet from our base's Health and Wellness Center for some recipes!

German Apple Pancake

1. 1 large egg
2. 1 egg white
3. 6 Tbsp flour
4. 6 Tbsp skim milk
5. 2 Tbsp brown sugar
6. 1/2 apple, sliced
Cinnamon to taste

Preheat oven to 425. Place rack in upper third of oven. Spray 10-inch pie plate with cooking spray and put in oven. Beat egg and egg white slightly, then stir in flour and milk. Batter will be lumpy. Pour batter in hot pie plate.
Toss apple with sugar and cinnamon. Arrange on top of batter in hot pie plate.
Bake 15 minutes. Makes two servings.
