Favorite Ingredient Friday
I really like making this dish after we've had ham and using the leftovers. It's so good! This recipe takes less than hour to make including preparation and cooking time.
Country Ham Chowder
1. 2 med. potatoes, cut into 1/2 inch cubes (I use 4 potatoes because we really like potatoes!)
2. 3 Tbsp butter or margarine
3. 1/4 C finely chopped carrot
4. 1/4 C finely chopped celery
5. 3 Tbsp flour
6. 2.5 to 3 C milk
7. 1/4 tsp pepper
8. 2 Tsp Dijon-style mustard, optional
9. 1 C finely chopped ham
10. 1.5 C grated sharp Cheddar cheese
1.Simmer potatoes in 3/4 C water in a covered pot for about 10 min or until tender. Reserve any liquid for soup.
2. Melt butter in large pot. Saute carrot and celery until golden and soft. Do not brown mixture.
3. Stir in flour and cook for 2 min, stirring well.
4. Add milk, potatoes with liquid, pepper, dash salt, and mustard (if used). Bring to a simmer.
5. Add ham and cheese. Cook over low heat 5 min.

Yum! I'm not usually one that likes ham, but this sounds great. I'll have to give it a try with the leftover ham from Easter. Thanks for sharing! I hope you have a wonderful weekend! =)
