Favorite Ingredient Friday

Sliced Baked Potatoes (This is a very easy way to give the bland potato a lot of new flavor. The light coating of butter and cheese gives the potatoes a crisp outside. - Taken from the recipe card).

For 4 servings:
1. 4 medium potatoes
2. 1 tsp salt
3. 2-3 Tbsp melted butter
4. 2-3 Tbsp chopped fresh herbs such as parsley, chives, thyme or sage OR 2-3 tsp dried herbs of your choice
5. 4 Tbsp grated cheddar cheese
6. 1.5 Tbsp Parmesan cheese

1. Peel potatoes if skin is tough, otherwise just scrub/rinse them.
2. Cut potatoes into thin slices but not all the way through. Use a handle of a spoon to prevent knife from cutting all the way.
3. Put potatoes in a baking dish. Fan them slightly.
4. Sprinkle with salt and drizzle with butter. Sprinkle with herbs.
5. Bake potatoes at 425 for about 50 minutes.
6. Remove from oven. Sprinkle with cheeses.
7. Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted and potatoes are soft inside.

I looked through all my recipe books the other day for a different way to fix potatoes and didn't come up with anything I thought we'd like or that I had the ingredients for. This one sounds great. Thanks Michelle.

I make these often and they are one of my boys' favourites!! I love making these int he summer time on the barbecue..yummmm!

umm these sound yummy Michelle! I fixed a roast today and I had seen a recipe online so I tried it...you put the roast, a pkg of Lipton onion soup over it, a can of cream of mushroom soup over it and then pour a pepsi over it. Let it cook in the slow cooker all day....it was very good and very tender. Im gonna try these potatoes...I love throwing stuff in the slow cooker and letting it go! lol
