Favorite Ingredients Friday


Mandarin Orange Cake

1. 1 box of yellow cake mix
2. 3 eggs
3. 1 large can mandarin oranges (drained)
4. ½ cup oil (I use applesauce in place of oil)

Mix together for 4 minutes on medium speed. Pour into pan (9x13x2) and bake at 350 for 25-30 minutes. Let cool.

Frosting:
1 carton Cool Whip
1 package vanilla instant pudding
1 can crushed pineapple (drained)
Mix together until fluffy. Spread over completely cooled cake. Refrigerate

Oh, perfect! I've been collecting simple recipes for my oldest daughter who loves to cook but who can't cook anything that needs a lot of measuring yet, and this will do really nicely for her cooking project this weekend.
That and fudge - wish me luck sticking to my diet!

Sounds like a recipe I can definitely use! I might try substituting my oranges of the trees in the backyard for the Mandarin Oranges! I am always looking for new ways to use the oranges. Whoo hoo!

I have had this and it is truly delicious!! Im so glad you posted it Michelle. I am making it for Christmas and couldnt find my recipe...I may have to make one before Christmas just to "test " it again....hahahah. It really is a good cake! Thank You! Have a good weekend!!!!
