Slow Cooker Thursday






Here is another dip recipe for those holiday parties!

Hot Artichoke Dip
2 medium leeks, thinly sliced (2/3 C)
1 Tbsp olive oil
2 14-ounce cans artichoke hearts, drained and coarsely chopped
2 C light mayonnaise dressing (do not use regular mayonnaise)
1 C chopped red sweet pepper
1 C finely shredded parmesan cheese
1 Tsp Mediterranean seasoning or lemon-pepper seasoning

Finely shredded parmesan cheese
Toasted pita wedges

1. In a large skillet cook leeks in hot olive oil over medium heat until tender. Place in slow cooker. Stir in remaining ingredients. Cover and cook on low-heat setting for 3 to 4 hrs until cheese is melted and mixture is heated through.

2. To serve, stir mixture, sprinkle with additional parmesan cheese, and keep warm on low-heat setting for up to 1 hr. Serve on toasted pita wedges.

Hmm. I have a confession.

I have no idea what an artichoke heart is. It's in a can, right?

Next time I'm at the grocery with my wife and kids, I'll make an effort to look for them. Then, I could hold my head high as I ask them, "Do you know what an artic heart looks like?"

This sounds wonderful. I have often wanted to know how you make artichoke dip. I have had it in restarants but now I can have it at home! Wonderful!
