Favorite Ingredient Friday

A few weeks ago we had dinner at Outback and I had vanilla bean sweet mashed potatoes - they were delicious! I found the recipe on line and made them last week. Probably not the healthiest for you, but they sure are yummy!

Outback's Vanilla Bean Sweet Mashed Potatoes

Ingredients:
MAKES 4 SERVINGS
2 pounds (about 3 medium) sweet potatoes
2 tablespoons butter, softened
½ cup sugar
1/4 cup Karo syrup
½ tablespoon cinnamon
½ tablespoon vanilla extract

Directions:
Cook sweet potatoes on a cookie sheet in 350-degree oven for 1 hour. Remove skin from sweet potatoes; set aside. Place butter, sugar, Karo, cinnamon and vanilla into mixing bowl; blend with an electric mixer for approximately 2 minutes. Add sweet potatoes; blend an additional 1 minute. Serve immediately.

This sounds fabulous and I don't think they are that bad for you. Sweet potatoes are considered one of the most nutritious foods you can eat... but the extras, well... once in awhile you just have to garnish things! Ha!

Wow, they sound really good. I am going to make instant mashed potatoes tomorrow night with my meatloaf but I might try that recipe sometime. There's always a chance. LOL.

We also had dinner at Outback a few weeks ago. My husband loved these potatoes. I was going to look for a recipe online and forgot all about it until I saw yours. So, THANKS!
