Slow Cooker Thursday


I don't know if Sandra is doing a Slow Cooker Thursday post or not, but here is one from me, just in case!

Teriyaki Chicken with Orange Sauce

We had this the other night and it was pretty good!

1 pound boneless, skinless chicken breast halves
1 16-oz package mixed veggies (broccoli, baby carrots, water chestnuts)
2 Tbsp quick-cooking tapioca
3/4 C chicken broth
3 Tbsp orange marmalade
2 Tbsp teriyaki sauce
1 tsp dry mustard
1/2 tsp ground ginger

1. Cut chicken into 1 inch pieces; set aside. (I skipped this step and placed the chicken on top of the veggies. When it was done in the slow cooker I just cut up the chicken then - much easier for me that way).

2. Place fozen veggies in bottom of slow cooker. Sprinkle tapioca over veggies; stir to combine. Place chicken pieces on top.

3. In small bowl combine broth, marmalade, teriyaki sauce, mustard, and ginger. Pour sauce over chicken/veggies.

4. Cook on low-heat for 4-5 hours, or high-heat for 2-2.5 hrs. Serve over rice.

I love throwing something in the slow cooker and smelling it cook all day and then with no fuss you have supper!

Sounds wonderful, Michelle. Goodness, I feel like I haven't had time to participate in my favorite weekly things in, well, weeks! Thank goodness for friends like you who supply me with these wonderful recipes.

And can I just say, regarding your previous post, we're at exactly the same place with Cameron. He's mostly pointing and saying one word at a time but occasionally he comes out with a couple in a row that crack us up. Isn't it so much fun, watching them learn and grow?
