Five Ingredient Friday


I saw this recipe in a magazine (don't remember which one now) and it caught my eye because it was called The Best Ever Mashed Potatoes. I thought what could be so different about this that they would be called "best ever?" Don't you just add milk, butter and salt and it's all the same? Here is the description, "Butter, milk, a bit of heavy cream, and our secret ingredient - a dash of vinegar - make these the most delicious potatoes ever." I had never heard of using vinegar in mashed potatoes, but thought I'd give it a try - guess what?! They were great! Kayla ate them right up and had seconds! (Which is unusal for her at dinnertime!) So here you go...

3.5 lbs russet potatoes, peeled and cut into cubes
2/3 c milk
1/3 c heavy cream
6 tbsp butter
1/2 tsp cider vinegar (I used a full tsp because when I tried 1/2 tsp I didn't really notice much taste)

In large saucepan, simmer potatoes in salted water until soft. Drain well. Return to pot or bowl; add milk, cream and butter. Using potato masher or electric mixer, beat potatoes until fluffy. Beat in vinegar, mixing well. Add salt to taste (I like adding season salt).

You know, we've made mashed potatoes with heavy cream and even garlic, but I've never tried cider vinegar before. I'll have to give this a try!
