Five Ingredient Friday


Since I was a little busy last Friday and didn't get to do a recipe, I'll do two quick ones for today!

Lemony Whipped Cream
Strawberry shortcake wouldn't be the same without whipped cream. Here's the classic recipe with a refreshing twist - a hint of lemon.

1 C whipping or heavy cream, chilled
1/8 tsp lemon extract
2 to 3 Tbsp sugar, to taste

Chill a large (preferably metal) bowl and beater from an electric mixer in the fridge for 10-15 min. (This helps keep the cream cold so it will whip faster and hold its shape better.) Pour the cream into the bowl and beat it on medium speed until it starts to thicken. Add the lemon extract and sugar. Continue to beat the cream until it is soft and billowy and holds slight peaks. If the cream shows the slightest sign of becoming lumpy, stop beating immediately. Cover the bowl and refrigerate until serving time.

Dannon Smoothie
1 C Dannon LIght 'N Fit
1/2 C juice (pick your juice - orange, cranberry, grapefruit, pineapple)
1/2 C diced fruit (fresh or canned - bananas, peaches, blueberries, strawberries)
1/2 C ice cubes

Place together in a blender; blend on high for a minute until smooth.

I used the vanilla yogurt, OJ and bananas and it was delicious!

Ooh, both of these sound yummy!

I never thought about using lemon extract in my whipped cream. I usually make mine with sugar and a tsp. of vanilla extract. I'll have to try lemon next time. :)

Two recipes for the price of one! And they both sound great. I love these simple things - I'd never think of something like this. Another few weeks of FIF and I'm going to reduce my time in the kitchen by about 90%!
