I fail to be grateful for the little things when there are so many overwhelming things in life and your post helped me.<BR/>I also wanted to share with you that we put our daughter 2 yrs old on a GFCF diet to help her attention and behavior, at the recommendation of a doctor. Since then I have been on the lookout of good foods in the area. It sounds like you are well on your way, better than we were, so I just will say that I look forward to your posts about how to manage the diet. I have tried a lot of different kinds, and this one has a great texture (many are on the grainy side) and makes a really nice pancake. We make a bunch and refrigerate them to use for PB&J sandwiches for Ben's school lunches. They are thin enough to roll up, as well. <BR/><BR/>And remember, Gluten Free Bread always tastes better toasted! We like Sami's Bakery Millet (or Millet and Flax seed) bread.<BR/><BR/>You are doing great with this whole GF thing!
